Introduction to Phaseolin

Phaseollin is a secondary metabolite produced by kidney beans induced by external stimuli (biological and abiotic factors). It is a plant defense factor. Studies have shown that red kidney beans and mung beans can produce phytoalexins when they are treated with biotic or abiotic inducers, such as insect bites, microorganisms, and chemicals. These substances have good antifungal activity, including Phaseollin and kievitone. It was also found that, in addition to inducers, damaged or infected beans also contained detectable phytoalexins at low concentrations. However, research shows that kidney beans do not produce phaseolin when they are not exposed to external pressure or external stimulation.

Inhibit alpha-amylase，Many plants produce alpha-amylase inhibitors, which ward off insects and protect the plant. These inhibitors are divided into three types. Phaseolin was one of the first to be isolated in the 1970s. It is a protein linked to a sugar called a glycoprotein. This alpha-amylase inhibitor is effective against animal alpha-amylase, but has no effect on the corresponding microbial or plant enzymes.
There are two types of alpha-amylase. One of them is a component of saliva called salivary amylase. It acts when a person begins chewing food and remains partially active after the food is swallowed. Most of these starches are broken down in the small intestine by pancreatin, another alpha-amylase that is inhibited by phaseolin. But the purer samples used today are thought to reduce the rate of starch decomposition in the digestive tract, thus reducing the absorption of raw sugar in the small intestine. This effect is also thought to result in lower insulin release after eating.
