What is sulforaphane

Sulforaphane is a sulfide contained in cruciferous vegetables and is the source of the pungent flavor of vegetables. Cruciferous vegetables, such as cauliflower and cabbage, contain molecules called glucosinolates. When molecules of glucosinolates are metabolized by myrosinase enzymes, they produce isothiocyanates. In the case of glucosinolates, the end product is sulforaphane.

Myrosinase is found in plant cells and microbiota, but not in human cells. This enzyme is a glucosinolate enzyme that is activated after damage to plant tissue, including during chewing. When broccoli is cut or grated, sulforaphane is produced due to the action of enzymes. Eat it directly as it will also be converted into sulforaphane by the action of bacteria in your intestines

• Detoxification

  The sulforaphane in broccoli sprouts supports the body’s natural detoxification mechanisms in a variety of ways.
