Limonin and other similar compounds are the main reason for the bitter taste of citrus fruits. They are generally concentrated in citrus fruits, especially in seeds, with the highest concentration. The physical and chemical properties of Limonin

Limonin is a crystal with a bitter taste (methylene chloride + isopropyl alcohol or acetic acid). Insoluble in water and ether, soluble in methanol, ethanol and glacial acetic acid. Melting point: 298°C, optical rotation -128° (c=1.21, acetone). Easily soluble in ester organic solvents, difficult to dissolve in water, and highly soluble in methanol and ethanol. Limonin, also known as Phellodendron lactone and Evodiacetin lactone, is the bitter component of citrus juice drinks.
